Farce pour poulet (Chicken Stuffing)
- 2 lbs sliced mushrooms
- 3/4 cup bread crumbs
- 1 tsp chopped tarragon + 1/2 tsp basil
- parsley, salt + pepper
- shallots 3 tsp
- Brown the mushrooms in hot butter.
- Flambe with brandy + so on, add the seasoning.
- Set aside to cool. Add the bread crumbs.
Marinate the chicken in:
- 1 glass white wine
- salt, pepper, tarragon (2–3 T)
- shallots, parsley + lemon rind + spices
- bay leaves + oil.
