- melted butter
- stale bread (not hard) — sliced thin
- 2 cups scalded milk
- raisins, plumped and poached in wine (kirsch)
- 1 T vanilla added to the scalded milk
- 3 egg yolks
- 3 whole eggs
- 1/2 cup heavy cream
- 1 cup sugar
- To make the custard: mix eggs, yolks + sugar, then add cream + milk.
- Cook in a bain-marie: line a mold with raisins, then 2 thin layers of bread, add the custard.
- Press the bread down as you pour because it will absorb it. Add more custard if the bread is dry.
- Add the melted butter before baking.
- Bake in a bain-marie at 300° for 1 1/2 hour, or until set.
